Split Pea Soup...
I hadn't realised there is no need to soak the Peas overnight until my daughter Alex let me in on the secret.
You will need,
1 Onion finely diced
1 Clove of Garlic finely diced
1 Carrot finely diced
2 Rashes of Bacon chopped up
1 Cup Dried Split Peas
2 stock cubes
750 ml Water
Heat up your pot and add a dash of oil, then fry off the onion and bacon.
Add the garlic and continue frying for a minute or two.
Add the Carrot and Split Peas, give it a bit of a stir and then add the Water and stock.
Bring to a simmer and continue cooking for about 25 min or until the Peas are soft and kind of melt away...
Adjust seasoning perhaps add Pepper.
You can give it a quick zap with a stick blender if you want to make the consistency smoother.
Serve with crusty bread or toast and it will warm the cockless of your heart.
I think it would be just as good without the Bacon and maybe crunchy Porchetta crumbled on top when you serve.
